Chicken Sausage Kebabs

As soon as the snow melts we pretty much start grilling, it's definitely our go-to cooking method in the summer. We love to our keep our dinners simple, so we can have even more time to play during the warmer weather. This recipe is easy to put together, cooks in very little time, and can be enjoyed by everyone in the family!


I've always enjoyed making kebabs, and love mixing up the ingredients we use. And although I enjoy using other meats, recently we discovered how easy using sausages on kebabs can be. 


Our new favorite kebab ingredients include: 
Chicken sausage
Red Pepper
Zucchini  
Onion
Grape tomatoes

For this recipe we used a 4 pack of sweet italian chicken sausages, one large red pepper, one medium zucchini, a medium onion, and half a package of grape tomatoes. This made about 10 kebabs.


To Prepare the Kebabs: 
Wash and cut up the pepper and zucchini into about 1 inch pieces. Peel the onion and chop the onion into large chunks. Slice the sausages into 1 inch circles. Rinse the tomatoes, but do not cut as they will go on to the skewers whole. 


 As we use bamboo skewers, we usually let these soak in water while we're chopping up the sausages and veggies. But you can also use metal skewers. 

You also want to preheat your grill to a medium/hot grill temperature, or if using charcoal let the charcoal burn down to an even temperature. 

Once everything is cut up, thread the ingredients onto the skewers. We don't usually make them all the same, but mix up what we're putting on to each one. 


Once prepared they can go on the grill as is. Cook on a medium to hot grill, turning a few times as they cook so that all ingredients are cooked evenly. They should take about 10 to 12 minutes to cook. 

Serve hot off the grill, either on the skewer or off. Our family enjoys eating them right off the skewer, we also love them with a side of couscous or pasta salad. 

Another easy alternative to chicken sausages include kielbasa, either beef or turkey. 

We love the grilled favor of the sausage, and the mix of these grilled veggies brings out almost a sweet to pair the sausage with. 
And of course it tastes even better knowing it was simple to out together!
